No-Rise Yeast Bread for Busy MomsI am always looking for ways to cut the time in my kitchen down so I can spend more of that precious time I have with my children.

I love the time we spend together homeschooling. So much, in fact, that I often forget about dinner. Many days I get carried away with lessons or projects, discover that it is almost dinner time, and realize that I did not plan ahead with dinner.

Now, dinner can be cobbled together pretty easily if you have bread or rolls. But we prefer the taste of homemade bread, so we don’t buy it in the store. And that can be a problem if it is half an hour till dinnertime and the only ideas you can come up with include rolls, or bread.

And so I developed a recipe for yeast bread that eliminates the rising time. That means that you can have warm luscious bread rolls on the dinnertime in just a half an hour (and that is about the time it takes to get a meal made and the table set).

 

No-Rise Yeast Bread

Warm Oven to 450 degrees

  • 2 Cups warm water
  • 2 Tablespoons dry yeast
  • 1 Egg (optional)
  • 4 Cups Bread Flour (a bit more if you add the egg)
  • 2 Tablespoons Baking Powder
  • 1 Teaspoon Salt
  • 2 Tablespoons Oil

Directions:

  1. Put yeast in a mixing bowl. Add warm water and let yeast proof for about 5 to 10 minutes.
  2. Add flour, salt, baking powder, and optional egg to mixing bowl.
  3. Turn on mixer (with dough hook attachment) and knead on medium speed for 9-10 minutes, or until dough forms a ball and pulls away from the sides of the bowl and leaves the sides clean. If the dough is too sticky, just add a bit more flour.
  4. Put dough in a pan (or form into rolls and place on a baking sheet) and bake (about 10-15 minutes for rolls and 20-30 minutes for bread). Notice the lack of rising time!

    1. No need to proof these. Seems odd but the baking powder does something to help along the yeast beyond just providing lift. Its great for when you have to make rolls at the last minute!
